Definitions

Hazard – Any biological, chemical, (including radiological), or physical agent that has the potential to cause illness or injury

Controls – Actions taken to eliminate or minimize a hazard

Outbreak – an incident in which two or more people experience a similar illness after ingesting a common food, and evaluation implicates the food as the source of illness

Salmonella – A common bacteria that affects the intestinal tract causing food poisoning

Objective

You will learn why a food safety plan for peanut products is important and learn about a real example of a serious outbreak. You should become familiar with the preliminary steps of a food safety plan and develop an understanding of standards that are used for food safety planning.
